Anyway "unattainable" is an adjective while 高嶺の花 is a metaphor for _something_ that is unattainable (if you see what I mean) so I suggest changing the gloss a little.

(comment)	I believe the headword should be emended to スッチー.
スッチ appears to be either incorrect, or rare, while スッチー is pretty common.
In addition to the dictionary support for the longer form, note that Google results for スッチ appear to be predominantly either nicknames, or スッチー with some kind of hyphen or dash in place of the ー.  The handful that remain might easily be typos...
