Editorial Comment Much as I admire Wikipedia (well, much of it), I'm not about to make it the arbiter for Japanese headwords. 餡こ is how it appears in Kojien, Daijirin, GG5, etc. etc.. That said, WWW hits indicate that 餡子 massively outranks 餡こ, and of course あんこ alone is most common.
